Recipe of the Week - Coconut Fudge

I have a confession to make - I ate all the fudge. I have finally come clean, it is really good to have that off my chest. In my defense however, it was really good fudge and who can say no to really good fudge? Anyone? Anyone? I didn't think so.
Nicole brought some coconut fudge to the office and it was so good, I needed to share this with you. It is so easy I can't wait to try this at home. Without further ado here is the Recipe of the Week - Coconut Fudge.
2 cups of brown sugar
1/2 cup butter
1/2 cup carnation milk
2 cups icing sugar
1/2 cup coconut
Melt butter on medium temperture and add the milk and the sugar. Bring to a boil and stir lightly for 5 minutes.
Take off the heat and add icing sugar. Use a good wooden spoon and 'stir it like you mean it' until all the icing sugar lumps are gone, you can use a mixer if you like but I like the work-out. Once all the lumps are gone, mix in the coconut.
Put into a greased dish to cool before you cut, it Will be thick so you have to push it down with a spoon. I like to put mine in the fridge before I cut it, because I can't wait for it. When I say I, I mean my husband and children.
