Recipe of the Week - Butter Chicken

These days you can buy anything you need in the kitchen in a can, bottle or jar. But I find these premixed items always lack a little something. Personally I think it is tender loving care, this is what is required to take an ok dish to a great dish. So for those of us who like to stop and smell the roses, I bring you Butter Chicken. This recipe will show you the stuff from the bottle has nothing on good home cooked food.

I do warn you though, it does take some time, but I assure you, it is worth it.

Ingredients

· 1/4 pint plain yogurt
· 1 teaspoon ginger
· 1 teaspoon Salt
· 1/4 teaspoon red food coloring
· 3lb chicken, skinless, jointed
· Oil
· 2 oz butter
· 1 stick of cinnamon
· 6 cloves garlic
· 6 green cardamom
· 1/4 pint sour cream
· 1/4 teaspoon saffron, crushed
· 1/4 pint Cream
· Salt to taste
· 2 teaspoon ground Almonds
· 1/4 teaspoon cornstarch
· 1 tablespoon water

Method

1. Mix yogurt, ginger, salt and red coloring and rub into chicken. Let it marinate overnight.

2. Place in an ovenproof dish and brush with oil. Bake in a 375 degree oven for 40-50 minutes. Save the liquid, if any.

3. In a saucepan, melt butter and fry cinnamon, cloves, cardamoms and bay leaf for 1 minute. 4) Add sour cream and chicken liquid. Add crushed saffron, and cream. Cover and simmer gently for 5-6 minutes.

4. Add chicken pieces and adjust seasoning. Add ground almonds. Dissolve cornstarch in water and add to the chicken.

5. Let it thicken. Cover and simmer for 3-4 minutes. Remove from heat.

Tip of the Week - Winter Activities

I bumped into a younger friend the other day and I asked him how he was enjoying the winter so far this year. His response was somewhat terrifying, he told me that he was having a great time Snow Scooting. I politely enquired as to what this Snow Scooting was, thinking it sounded like something I would enjoy.

Apparently you take a contraption that resembles a regular bicycle and where the wheels should be you will find wood that resembles snow boards. You then proceed to rocket down a mountainous slop until you get to the bottom, doing all manner of tricks and flips. For those of you that are more visual look at this Snow Scooting video

Now this sounds like fun – if you want a premature date with destiny! So I started thinking what activities are out there for more, well, sane folks, like us. And here are some of the more ‘I don’t feel like dying yet’ style of activities:

One of the more popular activities is Snowshoeing, personally I think this is a great activity for all ages. If you like walking you will love Snowshoeing. Even if you don’t have the right shoes, you can rent them almost anywhere out door gear is sold. A simple ‘Google’ search will point you in the right direction.

Another fun and much neglected activity is ice fishing, if you like dropping a line in the summer you will adore the challenge and tranquility of ice fishing. I recommend you only do this activity at recognized ice fishing spots, a great resource for this is Ice Fishing World

The main thing to remember when participating in any winter activities is to dress appropriately. Wear many layers with a thermal base layer, so if you get hot while exercising you can peel back a layer or two and not become too exposed.

Getting out there and participating in the magic of winter is a sure fire way to bet the winter blues and we must not forget, we need to keep our bodies active and flexible.

Congratulations Marie Our $5,000 Sweepstakes Winner

On Friday the 14th of January 2011 we drew out our grand prize winner in our sweepstakes draw. This person was the lucky recipient of $5,000.

We would like to take this time to formally congratulate Marie Rose from Halifax, Nova Scotia.

From the 1st January 2010 right up to the 24th December 2010 Clearpoint Direct customers were sending in their sweepstake entry coupon to cement their chance to win $5,000. They were able to enter one of three ways,

- by mail,
- on the web or
- by placing an order from our catalog.

We placed those names in our database and we randomly selected 500 names from the eligible entries and placed them in a barrel. We then waited until 1 pm, spun the barrel and drew Marie out of the barrel.

Marie was understandably surprised when we called her to tell her the good news, once again congratulations and enjoy your winnings.

The Lost Art of Letter Writing

As ‘Blue Monday’ passes, officially the most depressing day of the year (who thinks of these things and better yet how do they work out that this particular day is more depressing than other Mondays?), I got to thinking of the last time I received a letter in the mail.

You know, the kind that you have to go outside for, they have a hand written address on them and they do not contain bills. When I was a wee lass I used to write to my grandmother religiously and both of us waited eagerly for the next letter. When did it stop being ‘cool’ to send a letter?

With the growing popularity of the internet and everyone with a pulse having an email address, even if some of us still don’t know what is for, is the art of letter writing dead or is it in a ‘mid season slump’?

I hope for the latter, I want my children, their children and their children’s children to experience the joy of receiving a hand written letter in the mail. Lovingly addressed to them in beautiful script with a real hand applied stamp.

Receiving a lifeless email with attached digital photo’s does not arrive with the same euphoria as a hand crafted well thought out letter with clear family photo’s inside. How do we stop this slow decay of letter writing? Simple! We find a piece of paper, a pen that works and we start with one simple word: Dear.

After that, let the words flow. When you are finished fold the letter lovingly and head off to the post office for an envelope and stamp. Do not think of this as a chore but rather an ‘outing’. A mini adventure if you will. While you are there peruse the nearby shops and make an afternoon of it.

I can guarantee whom ever you send that letter to will definitely forget about the winter blues when they see in their mail box, not a bill or flyer but a letter from you!

Get writing, and give some life back to the art of letter writing. You will be glad you did.

Recipe of the Week - Asian Noodle Salad

Following up from last weeks hot, hot, hot jalapeno spread I thought we could try something from the other side of the world – the Orient. They also like their food with a little kick but they use a different type of spice. If you like your food spicy you need to have Sriracha in your cupboard, add this to any dish, with care, and it will ‘spice up your life’.

This week we have a noodle salad for you to try. This is great on its own or as a side dish. Enjoy.

·1 pkg of rice vermicelli, soaked until soft in hot water and drained
·Zest and juice of 2 limes
·1/4 cup of peanut butter
·1/4 cup of marmalade
·1 tbsp of soya sauce
·dash of hot sauce
·2 tbsp of olive oil
·3 x green onions, sliced
·1 cup of cilantro leaves
·1 x carrot, peeled and shredded
·1 cup of peanuts

DIRECTIONS:

1.To make the dressing, whisk together lime zest and juice, peanut butter, marmalade, soya sauce, hot sauce and olive oil until smooth.
2.Place the rice vermicelli, green onions, cilantro and carrot into a salad bowl and add dressing. Toss well and garnish with peanuts.
