Recipe of the Week - Trail Mix Chicken
A bunch of us were sitting in the lunch room today when in walked Patricia, from our creative department, with this amazing stuffed juicy, succulent, chicken breast. I was so impressed with it I immediately demanded to know how to make it. Patricia was kind enough to share her recipe and I am now sharing it with you.

2 cups cooked rice
1 cup trail mix (variety of nuts and dried fruit)
1 Tbls poultry seasoning
4 chicken breasts
Apricot Jam
Mix the cooked rice, the trail mix and poultry seasoning together in a bowl. Cut a pocket in the chicken breast and stuff the mixture inside, save the left over mixture. Place the chicken breasts in a Crock Pot and cover them with the rest of the mixture.
Set your Crock Pot to high for 5 hours. When finished, spread the jam on the chicken breast and continue to cook on low for a further 30 minutes.
