Following up from last weeks hot, hot, hot jalapeno spread I thought we could try something from the other side of the world – the Orient. They also like their food with a little kick but they use a different type of spice. If you like your food spicy you need to have Sriracha in your cupboard, add this to any dish, with care, and it will ‘spice up your life’.
This week we have a noodle salad for you to try. This is great on its own or as a side dish. Enjoy.
·1 pkg of rice vermicelli, soaked until soft in hot water and drained
·Zest and juice of 2 limes
·1/4 cup of peanut butter
·1/4 cup of marmalade
·1 tbsp of soya sauce
·dash of hot sauce
·2 tbsp of olive oil
·3 x green onions, sliced
·1 cup of cilantro leaves
·1 x carrot, peeled and shredded
·1 cup of peanuts
1.To make the dressing, whisk together lime zest and juice, peanut butter, marmalade, soya sauce, hot sauce and olive oil until smooth.
2.Place the rice vermicelli, green onions, cilantro and carrot into a salad bowl and add dressing. Toss well and garnish with peanuts.
